Caramelized sugar is obtained by heating ordinary sugar, where the sugar is subjected to a temperature of 180-190ºC. In this process, sugar loses 12% of its molecular weight. In addition, heating the sugar changes its composition and the caramelized sugar contains 0.3% formaldehyde that lasts for a considerable time as the temperature increases. In other words, caramelized sugar becomes a mixture of polymerized products of formaldehyde.
